Slow Cooker Cowboy Stew

Cooking Time:  6-8 hrs
Servings:  8 (1 cup each)

Ingredients:

  • 2 lb. Twisted Fork Cattle Co boneless stewing beef or roast, cut into 2×1-inch pieces
  • 1 Tbsp. McCormick Steak Seasoning
  • 2 Tbsp. flour
  • 2 Tbsp. chili powder
  • 2 carrots, sliced
  • 1 onion, diced
  • 2 cloves garlic, diced
  • 3 stalks celery, sliced
  • 1 can corn, drained
  • 1 can kidney beans, drained and rinsed
  • 1 jar (16 oz.) Salsa
  • 1-2 cups beef broth (depending on how ‘soupy’ you want it)
  • 1/4 cup barbecue sauce
  • 1/2 cup cream cheese
  • 1 cup shredded Cheddar Cheese

 

Preparation:

Put salt, pepper and McCormick steak seasoning on meat.  Cook meat, in batches, in large skillet on medium heat until evenly browned, stirring occasionally; spoon into slow cooker. Add flour and chili powder; mix well.

Add all remaining ingredients except cheese; stir. Cover with lid. Cook on LOW 6 to 8 hours.  Add cream cheese and cook about 20 minutes more.

Serve topped with cheese.
